A: Yes, you just need to loosen the handles until the strings come lose.
When you put a fresh string on, attach the correct end to the top and loop it a few rounds to shorten it, before looping it around the knob at the bottom of the erhu.
What you should not do is loop the string around the knob at the bottom, attach the other end at the top and loop the excess string there. That would twist the string like a telephone cord and create unwanted wolf tones.
